I'm pretty sure this is totally GAPS friendly. It's one of my favorite things to make. To serve four, you will probably need:
2 cups red split lentils
6-9 cups water (6 gives thicker consistency. I prefer a soupier texture.)
2 tsp ground cumin
2 tsp salt
1 tsp black pepper
1 sweet yellow onion, diced
1-2 T coconut oil
1. Saute the onions in the coconut oil on medium-medium high heat until they are translucent and maybe are showing a little bit of brown
2. Add water, salt, and pepper. Bring to a boil.
3. Add cumin and lentils. Bring back to a boil, then let simmer for around an hour, I guess? (I have taken to pressure cooking it for 5-7 minutes, but that destroys nutrients. Others blend it after 45 minutes and then put it back to simmer for another 7-10 minutes)
4. It's ready. Enjoy. Many add lemon juice (to individual bowls) and eat it with red radishes on the side.
